Turtle Cheesecake Brownie Bars {Recipe}

Turtle Cheesecake Brownie Bars {Recipe}

These cheesecake-brownie bars are really chocolatey, really rich, and really good!

What You Need:
Brownie Layer: **Or just use a box mix**
1/2 cup heavy cream
2/3 cup brown sugar
4 oz. chocolate chips or chopped chocolate
3/4 cup butter, at room temperature (divided)
2/3 cup sugar
4 eggs
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
2 Tbsp. cocoa powder

Caramel Layer:
1 lb. caramels (unwrapped)
1/3 cup heavy cream
1-1/4 cup coarsely chopped pecans, toasted

Chocolate Cheesecake Layer:
2- 8 oz. bricks of cream cheese (at room temperature)
1/2 cup sugar
2 eggs (at room temperature)
4 oz. melted chocolate (semisweet recommended)

Optional for topping:
1/2 cup additional pecans
Reserve a little caramel sauce
2 oz. additional melted chocolate


*Note: You need parchment paper, as well, to line the pan. These bars are sticky! So, you need to make sure you line the pan well!



Make the Brownies

Preheat the oven to 350-degrees (F).
*Please note: if you are using a box mix, you may need to adjust your cooking times slightly. I bake the brownies for 1/2 of their final cooking time before adding the additional layers. In the end, that means they still bake longer than they would alone.

In a small saucepan over medium-low heat, melt the chocolate with the cream, brown sugar and 1/4 cup of the butter. Set aside to cool.

In a medium mixer bowl (or the bowl of a stand mixer), combine remaining 1/2 cup butter and sugar until light and fluffy. (About 2 minutes on medium speed.)
Add the eggs, one at a time, mixing with each addition.
Add the remaining ingredients and mix until it just comes together.

Pour the batter into a 9x13 pan, lined with parchment paper.
*You may want to butter or spray any parts of the sides that the parchment paper doesn't cover. The caramel layer is sticky! So, you want to try to get as much of the pan covered as possible to keep it from sticking to the pan.

Bake in the oven for 15 minutes. Remove from the oven to a cooling rack.

While the brownies are baking and cooling, work on the other layers.

Make the Caramel Layer

Combine the cream and caramels in a large, microwave-safe bowl or mixing cup.
Melt the caramels on 50% power for about 3-5 minutes, stirring often.

Toast the pecans in the oven for about 5 minutes after you remove the brownies. Coarsely chop them.

Make the Chocolate Cheesecake Layer

In a mixing bowl, combine cream cheese and sugar at medium speed for about 1 minute, scraping down the bowl as necessary.

Add the eggs, one at a time, mixing well after each addition.

Add the melted chocolate, and mix until completely combined.

Assemble and Bake

Pour the melted caramel over the brownie crust.
*Remember to reserve about 1/4 cup for drizzling over the top!*
Sprinkle with chopped pecans.

Spread the cheesecake mixture over the caramel layer, being careful to spread lightly. The caramel layer below wants to mix it up... don't let it!

Bake at 350-degrees for 25-30 minutes, until the cheesecake is set.

Remove to a cooling rack, and let stand for about 10 minutes. If there are spots where your pan isn't covered with parchment paper, run a knife around the edge to loosen the molten caramel layer.

Drizzle with reserved caramel sauce and a little melted chocolate. Sprinkle chopped pecans over.

Cool completely on the cooling rack before moving to the refrigerator to chill for about 3 hours to overnight.

 Cut in to bars. Enjoy!

Banana Split Dessert Bars {Recipe}

It's official... I have a problem with banana split-styled desserts. But they're just sooooo good!

I brought these cake/bars to my National Night Out block party, and they got rave reviews all around.

What You Need:
For the Bars:
1 cup granulated sugar
1/2 cup butter (at room temperature)
2 eggs (at room temperature)
1 tsp. vanilla
2 cups flour
1 1/2 tsp. Baking powder
3/4 tsp. Baking soda
1/2 tsp. salt
1/2 cup buttermilk
1 cup mashed ripe bananas (about 2 medium)

For the Chocolate Layer (and drizzle):
1/2 cup heavy whipping cream
6 oz. semi-sweet chocolate chips (about 1 cup)

For the Strawberry-Pineapple Layer:
1 cup frozen strawberries (defrosted--reserve the juice!)
1/2 cup crushed pineapple (optional)
2 Tbsp. sugar
1 Tbsp. corn starch

For the Vanilla Pudding Layer:
1 3.5oz. (small) box instant vanilla pudding
1 cup heavy whipping cream
1 cup whole milk

For the Whipped Cream Layer:
2 cup heavy whipping cream
3 Tbsp. light corn syrup
1/4 cup powdered sugar
(or just use Cool Whip or another pre-made whipped topping)

Toppings (optional):
Maraschino Cherries
Chopped nuts (any kind)
Chocolate sauce (from above)
Shredded Coconut
Sprinkles
Mini Chocolate Chips

Yield: About 24-36 bars

Bake the Bars:
Preheat the oven to 350-degrees (F) and line a 9"x13" pan with parchment paper.

In a medium-sized bowl, whisk together the flour, baking powder, baking soda and salt.

In the bowl of a mixer, cream together butter and sugar until light and fluffy. Add eggs and vanilla, and mix until smooth.

Add half of the flour mixture. Mix well.
Add the bananas. Mix well.
Add the remaining half of the flour mixture. Mix well.
Add the buttermilk. Mix well.

Pour into parchment-lined pan, and bake for 30-35 minutes. The bars/cake is done when a toothpick inserted near the center comes out clean.

Let the cake cool on a cooling rack for about an hour. While it cools, you can work on the remaining layers.

Make the Chocolate Layer:

Heat the cream on the stove or in the microwave until small bubbles form along the edges-- do not allow it to boil. If you use the microwave, keep a very close eye on it. When it boils, it makes a huge mess in the microwave in no time.
Pour the heated cream over the chocolate chips in a medium-sized bowl. Let it set for 30-seconds to a minute.

Whisk until the chocolate is smooth and shiny. (It starts off kind of milky and mottled looking. It will come together.)
Set in the refrigerator for 30 minutes to cool. (You want it to become the consistency of thick pudding.)

Make the Strawberry Layer:

Strain the juice from the strawberries into a measuring cup. You want between 1/3 and 1/2 cup of juice. Set aside.
In a small saucepan, whisk together corn starch and sugar. Add the reserved strawberry juice. (If you need extra, you can always take some of the juice from the pineapple. if you're using that. Otherwise, add a little water.)

Cook the sauce over medium heat, stirring frequently until it thickens- almost to the consistency of jelly.

Remove from the heat and add the strawberries and (drained) pineapple. Stir to combine. Set aside to cool.

Make the Pudding Layer:

In a mixer bowl, combine the pudding mix, cream and milk. Mix on low to combine. Let set for 2-3 minutes.

Mix again on high until the mixture resembles a mousse consistency-- with lots of airy bubbles in it. For me, this usually takes between 3-7 minutes depending on how cold the milk is and whether I'm using a stand mixer or a hand mixer.
Set in the refrigerator for at least 15 minutes while you work on/assemble the rest of the bars.

Make the Whipped Cream:
Quick Note on the whipped cream: generally, you don't want to make whipped cream too much in advance. I added corn syrup to this to help it stabilize, but still, try to make the whipped cream as close to when you're going to serve the bars as possible. It helps keep it from weeping and from shrinking.

Place your mixer bowl and beater(s) in the refrigerator for at least 10-15 minutes before you whip the cream. This helps the cream whip up better.

Combine the cream, corn syrup and powdered sugar in the chilled bowl.

Mix on high until stiff peaks form (7-10 minutes). (Store in the refrigerator if you're not ready to use it just yet.)

Assemble the Bars:

Spread the chocolate (about as thick as pudding) on top of the bars.Chill in the refrigerator for about 15 minutes.
Reserve about 1/2 to 1/4 cup for drizzling. (Put the reserved in a ziptop baggie to make it easy to drizzle later.)
*Note: If  you spread the chocolate when it is too thin/runny, the top layers can all slide off. Take my word on this one!  

Spread the strawberry layer over the chocolate layer. Again place in the refrigerator for at least 15 minutes to set a little.

Spread the vanilla pudding layer over the strawberry layer. Again with the refrigerating between layers.
*Note: I used a piping bag to get the pudding on the strawberry layer. I've found this helps keep your layers separate. You could also use a ziptop baggie with a large hole cut out of the side.

For the whipped cream, I piped the cream on using a tip #1M. But you could just as easily spread it on top with a spatula, if you want.

I recommend leaving the bars in the pan for serving. I took mine out, and after a while, the toppings began to slide off.

To decorate, use a maraschino cherry, chocolate drizzle, chopped nuts, sprinkles, mini chocolate chips... the possibilities are endless.

Strawberry-Rhubarb Cream Cheese Bars {Recipe}

Rhubarb season is wrapping up in my backyard this week. Getting the last of the good stalks. I thought I'd try a cream cheese rhubarb bar after seeing the recipe for one on another Minnesotan's baking blog, A Farmgirl's Dabbles. These are super, duper good. And not really all that much work.

What You Need:
For the Crust/Topping:
2 1/2 cups all-purpose flour
1 cup firmly packed brown sugar
1 cup chopped, toasted pecans
1 cup Butter, chilled

For the Filling:
4 cups chopped rhubarb
1- 3 oz. pkg. strawberry jello*
2- 8 oz. brick cream cheese (at room temperature)
2 cups sugar (divided)
2 eggs
1 tsp. vanilla

*Note: If you wanted to substitute fresh strawberries for the jello, I would take out the jello, decrease the rhubarb to 3 cups, add 1-2 cups of chopped fresh strawberries, and add 3 Tbsp. of corn starch in place of the jello. Coat the rhubarb-strawberry mixture with the corn starch and the sugar before layering it on.

Yield: 24-30 bars

Make the Crust/Topping:
Preheat the oven to 350-degrees (F).

In a mixer bowl, combine flour, brown sugar and pecans on low. Add cut butter and mix on low until the mixture becomes coarse crumbs.

About pea to marble-sized, like you see above.

Pour half of the mixture into the bottom of a parchment-lined 9x13" pan. Press it down to create the crust.
Bake in the oven for 10-15 minutes or until it just starts to be a tiny bit golden on the edges.

Make the Filling:

In a medium-sized bowl, coat the rhubarb with the jello and 1/2 cup of the sugar. (See note above if you want to substitute fresh strawberries.)

For the cream cheese mixture, I used the same one that I'd used for the crust, pouring the reserved half of the crust into another, smaller bowl. No need to wipe it down, it's all getting mixed up anyway.
In the mixer bowl, combine room temperature cream cheese and sugar until light and fluffy.
Add the eggs and vanilla. Mix at medium speed until well-blended.

Pour the cream cheese mixture over the partially-baked crust, and spread it evenly.

Sprinkle the coated rhubarb/strawberry mixture over the cream cheese (be aware that the cream cheese mixture is soft, so you won't be able to do a lot of spreading without getting it all mixed up).

Top with the remaining crust mixture.

Bake at 350-degrees (F) for 40-45 minutes. Until the edges are brown and bubbling, and the center is still kind of wobbly when you shake it, but not too wobbly.

Cool on a cooling rack for about an hour, then refrigerate for at least 3 hours.

Cut into bars, and enjoy!

Caramel Apple Cheesecake Bars {Recipe}

Apples, caramel sauce, cheesecake... what could be better??

What You Need:
For the Crust & Topping:
2 1/2 cups all-purpose flour
1 cup firmly packed brown sugar
1 cup chopped, toasted pecans
1 tsp. salt (if using unsalted butter)
1/2 tsp. ground cinnamon
1 cup butter, chilled

For the Filling:
4-6 apples, thinly sliced
1 - 1 1/2 cups caramel sauce*
2- 8 oz. block cream cheese (at room temperature)
1 cup sugar
2 eggs
1 tsp. vanilla

*Note: You can make your own caramel sauce, or you can buy a jar of caramel ice cream topping, or you can also melt about 6-8 oz. of caramel candies with 1/2 cup evaporated milk on the stove or in the microwave.

Yield: 30-40 2" square bars.
Make the Caramel Sauce

Because the sauce will need to cool a little, I recommend starting by making the caramel sauce, whether you're going from scratch (see my recipe here) or melting candy caramels with evaporated milk (like I did here). 

Make the Crust/Topping
Preheat the oven to 350-degrees (F).

In a medium-sized mixing bowl, combine flour, toasted pecans, brown sugar, cinnamon and salt (only add the salt if using unsalted butter).

Mix in the butter (cut into small pieces) with mixer or with a 'pastry cutter' until pea-sized crumbs form.
Pour about half of the mixture (about 2 1/2 cups) into a 9x13" pan lined with parchment paper.

Press the mixture into a tight crust on the bottom of the pan. Bake for 10 minutes while you make the filling.

Make the Filling

Combine room-temperature cream cheese and 1 cup of sugar in a mixing bowl. Beat on medium speed until light and fluffy.
Add eggs one at a time, adding the vanilla with one of the eggs. Mix each egg well until the batter is again light and fluffy.
Set aside.

Slice 4-6 apples thinly. I left the skin on the apples, but you could also peel them.
If you want to go for easier, you could also cube the apples instead of slicing them thin.

Remove the bottom crust from the oven (after no more than 10-15 minutes), and line the apple slices along the crust.

Pour 1/2 - 3/4 cup of the caramel sauce over the apple slices.

Cover the apples and caramel with the cheesecake mixture, spread evenly.
Top again with the sliced apples.

Pour the remaining 1/2 - 3/4 cup of caramel sauce over the second layer of apples.

Top with the remaining crust/topping mixture.

Bake for 50-60 minutes at 350-degrees (F), or until the topping is golden brown, the caramel is bubbly and the bars don't seem too wiggly in the center when you shake the pan.

Refrigerate at least 3 hours to allow the cheesecake and caramel to set before slicing into bars.

If desired, drizzle with a little more caramel sauce. Enjoy!

Note: This recipe could be adapted in many ways. You could substitute half of the pecans for dry oatmeal, if you wanted a little more "crumble" flavor. You could leave out the caramel sauce if you're not a big caramel fan. (gasp!) If I did that, I'd probably add about 1/2 tsp. more cinnamon. You can dice your apples, instead of slicing them. Substitute walnuts for the pecans. Lots and lots of options!
