Fruit Pizza {AKA The Best Summer Dessert for a Gathering}


I remember my Aunt Carrie making fruit pizzas for us when I was a kid. I loved them.
I took this one to a church gathering, and it was gone before any of the other desserts. Everyone loves fruit pizza!

What You Need:
For The Crust:
1/2 cup (1 stick) unsalted butter, at room temperature
1/3 cup sugar
1 egg
1-2 tsp. vanilla
1 1/3 cups flour
1 tsp. salt
1 tsp. baking powder

For the Icing:
1- 8oz. block of cream cheese, at room temperature
1/3 cup sugar
1-2 tsp. vanilla

Assorted sliced fresh fruit for toppings
Yield: 1 pizza (approx 12" round pizza pan or 8"x12" rectangular pan)

Note: You can go the super easy route, too, and use a store-bought refrigerated sugar cookie tube, and canned fruit, drained.

Make the Crust

Preheat oven to 350-degrees(F).
Combine the butter and sugar in a mixing bowl until light and fluffy.
Add the egg and vanilla. Mix until well-combined.
Add the flour, salt and baking powder. Mix until all holds together, scraping down the bowl as necessary.

Line pizza pan with parchment paper (if desired). Press dough to edges of the pan-- sprinkle with a little extra flour if the dough is too sticky to spread.
You may prick the dough with a fork, if you wish. It's not all that necessary, though, because it doesn't rise much.

Bake at 350 for 10-15 minutes, or until the edges are just golden brown.
Let cool completely.

Make the Icing

While the crust bakes and cools, bring cream cheese to room temperature.
Place the cream cheese into the mixing bowl, alone. Turn on the mixer, and slowly add the sugar to the cream cheese while you mix it. Mix until light. Add vanilla. Mix completely.


Assemble the Pizza

When the crust is completely cooled, spread the icing on the top of the crust.

Arrange the cut fruit.
