Special K Bars
These peanut butter and chocolate treats are two of my sisters' favorite holiday treats. And I call them healthy because they have protein (peanut butter) and Special K cereal. Breakfast, solved!
What You Need:
1 cup sugar
1 cup light corn syrup
2 cups chunky peanut butter
6 cups Special K Cereal
6 oz. semisweet chocolate chips
6 oz. butterscotch chips
Begin by lining a 9x13 pan with parchment paper.
In a small saucepan, combine the sugar and corn syrup. (Spray the measuring cup with cooking spray to help the corn syrup come out easier.)
Set it over medium heat until it begins to boil.
Remove the pan from the heat and add peanut butter. Stir to combine.
Add the Special K cereal and slowly, carefully stir to coat the cereal with the sauce.
Pour into the prepared pan, and spread evenly.
Allow that to set while you melt the chocolate and butterscotch chips. (I microwave mine on power level 3 for about 3-5 minutes. Stirring often to make sure they don't get too hot.)
Pour the chocolate mixture over the cereal bars, and spread evenly.
Allow to cool until chocolate is set.
Cut into bars.
These may be frozen, but be sure you cut and separate them first.
