Grass, Bees & Ladybugs Cupcakes

Grass, Bees & Ladybugs Cupcakes

These cupcakes are the most popular design for the cake decorating parties and workshops I do. The techniques are all simple, and even young kids can make these look cute and fun. The hardest part is coloring all of that icing! (You could always use the tubes of colored icing, though, if you want.)

What You Need
Cupcakes, baked & cooled
Filling & Tip #230
Green icing - Tip #233
Yellow icing - Tip #12
Black icing - Tip #3 (or 2) & 5
White icing - Tips #3 & 81
Red icing - Tips #5 & 12

The first thing you want to do is fill the cupcake.
Insert tip #230 about halfway into the cupcake, squeeze. The best way to know if anything's getting in there is to hold it in your hand while you do it. You can feel it "puff" a little on the bottom while you do it.
(Here's a link to the complete description of how to use a filling/bismarck tip.)

To make the grass: Hold tip #233 straight up over the cupcake. Starting very near the surface, squeeze. While squeezing, pull straight up. If you pull at an angle or to the side your grass will look weird.

I love decorating things with grass! Isn't it SO cute???

To make the bee, start with the body. Hold tip #12 straight up from the cupcake. Squeeze and let the icing dot get as fat as you want your bee's body. Then slowly move the tip towards you (keeping it straight up). If you move too quickly, the body won't be the same "fatness" all the way through. Stop squeezing before you pull away.

Next, you'll add the stripes. Using black icing, and tip #3, hold the bag so that the back of the bag points to your right (unless you're left-handed, then have it point left). Start on one edge of the bee's body. Squeeze and drag the tip across the body. Stop squeezing when you reach around to the other edge of the bee.

Add a tip #12 yellow head. With the back of the bag pointing at your chest, squeeze, and hold the bag steady. Let the icing get as fat as you want the head. Stop squeezing before you pull away.

Add the whites of the eyes with a tip #3 and white. You'll use the same technique as you did with the head.

Add the facial features with a tip #3 (or 2) and black icing. The eyes and nose are done as you did the head-- with the back of the bag at your chest, and the mouth is done like the lines-- with the back of the bag going to the side.

Add the wings using a tip #81 and white icing. Hold your bag so that the "divot" in the tip faces in towards the center of the bee's body. Begin by touching the surface. Squeeze. Slowly pull up while squeezing. Flip the tip the opposite way to do the other wing.
* If you don't have a tip #81, you can use a small petal tip like tip #101, or you could use a tip #5. The wings will look different, but they'd still work.

Finish the bee off with some antennae on the top of his head. Using a tip #3 (or 2) and black icing, hold the bag straight up from the bee's head. Begin by touching (lightly) the head, squeeze, and pull up while squeezing.

Now for the ladybug. Make the body using tip #12 and red icing. Hold the bag straight up from the surface, just a little bit above the top of the grass. Squeeze and hold the bag steady. Do not raise it up. Let the icing fan out and make a half-ball shape. When the ball is large enough for the ladybug's body, stop squeezing before you pull away.

Next, you'll add the ladybug's stripe, dots and head. I recommend starting with the stripe. Do this stripe just as you did the bee's stripes... with tip #3 and black icing . The bag should point to the right (or left, if you're left-handed).
Add the dots by holding the bag straight up over the ladybug's body. Squeeze. Stop squeezing before you pull away.
Add the head last. You may want to use a tip #5 for this. Add the ladybug's head as you did the bee's. Hold the bag so that the back of the bag points at your chest. The tip will be just off the surface of the ladybug's body. Squeeze. Let it get as big as you want, holding the bag steady. Stop squeezing before you pull away.

Add the whites of the eyes like you did the bee's.

Add the facial features just like you did the bee's, too. But I like to use red for the ladybug's mouth.

Finally, you can make a caterpillar, too, if you wish. Using your tips #12, make alternating dots (just like you did for the ladybug's body & spots) using your colors.

Add legs, facial features, and antennae using your tip #3 and black icing. The legs are shaped like a backwards letter "L."

That's it! Enjoy your summer-y picnic cupcakes!

Black Sanding Sugar (sprinkle sugar)*

100 Days of School Cookies

100 Days of School Cookies

The 100th day of school means 100 cookies for the class.
That's what we did at our house this weekend, gearing up for the big day.

What You Need:
Vanilla Sugar Cookie Recipe
or Chocolate Sugar Cookie Recipe
Small round cookie cutter (I used the medium of this set.)
Royal Icing Recipe
FoodWriter or other edible ink markers

*Note: It took me a little more than one batch to get the 100 cookies plus the rectangles for the extra cookies. You may be able to eek out 100 from a single batch, but I recommend at least a 1 1/2 batch of either recipe, just so you have a few for the inevitable mess-ups along the way. (I did not make nearly enough backups, which meant I was a little crabby when they were careless... not enjoyable!)

I rolled, baked and iced the cookies while the boys were at day 98 of school.
(I iced them using Royal Icing, a little bit thicker than I usually flood with. You want the line to disappear in the count of 20 instead of 10. See more on Royal Icing Consistency Here.)

Then, they wrote each number 1-100 on them with the edible ink markers.
We did 1-50 in Vanilla Sugar Cookies, and 50-100 in Chocolate Cookies.

Now, because I have twins, who are in two different classes at school, really I got to make 200 of these cookies, and they each also made two bigger cookies that said "100 School Days" for each of their teachers.
It was a labor of love, but for each of the 25 kids in their classes, they get 4 cookies each to celebrate the occasion!

Marshmallow Flower Cupcakes on Fox 9

Marshmallow Flower Cupcakes on Fox 9

If you have trouble viewing the video above, Click Here to visit the MyFox9.com website to see the video.

I'm super excited and super nervous to take one of my little men on TV with me this morning to make these marshmallow flower cupcakes.

We first made them last year for Teacher Appreciation Day for their preschool teachers.

What You Need:
Cupcakes
Mini-marshmallows (about 20-25 per cupcake)
Icing (any kind will do, even canned icing)
Sugar sprinkles in pretty flowery colors
Sandwich Bags

Spread (or pipe) some icing on top of the cupcake.
*Note: DO NOT put too much icing on top. When you press the marshmallows in, and especially when little hands do it, the icing squishes to the side a little.

Then, allow the children to cut the marshmallows in half, and shake them up in a baggie filled with sugar sprinkles. The sprinkles stick only to the cut spots. It's great!

Then, they can arrange them as they like.

If you want them to be a little more like a flower, cut the marshmallows at an angle so that you get a point at the top... like so.

When you drop them in the sprinkles, be sure that no two marshmallows are touching.

Arrange them on the top of the cupcakes so that the 'flat' part sits against the top of the cupcake.

*Note: Keep in mind that marshmallows do get hard pretty quickly, so you don't want to make these too far in advance.

School's Out for Summer - Cookies

School's Out for Summer - Cookies

Today was our official last day of school for the year. My guys are going to be first graders! Seems impossible. I wanted to make some cookies to thank the teachers, but I was running really short on time this week.

So, I went the Kindergarten way out. I baked some simple round cookies, used Food Writer edible ink markers to draw simple pictures on them, then used red icing to "cross out" the school-related things that they would no longer deal with over the summer... and green icing to circle the things they'd welcome.

I did some personalization. The whistling lips were for the teachers who have my one guy who cannot. stop. whistling. ever.

And the highlight... was the bloody tooth. Kindergarten teachers deal with a lot of lost teeth... and two of them do not like teeth at all!

*Note: My original idea was to do cookies based on the Alice Cooper song, 'School's Out.' Everyone told me it was too obscure and the teachers wouldn't know what I was talking about. Ha! The teacher opened the cookies, and immediately started singing the song. Next year, I guess.

Donuts for Dads Week

Donuts for Dads Week

This week on the blog, I'm going to feature a number of different homemade doughnut (or donut) recipes... as well as some tricks and tips to make many flavors quickly and easily.

Now, I admit that I am a raised or yeast donut girl at the donut store, but those are so putsy to make, and in the morning, for breakfast, I do not want to have to do that much work. So, I will be focusing on cake donuts. They're easier, faster, and don't always have to be fried!

I'm going to start with what you need to get started: the pans and donut makers.

Quickest and Easiest, of course are the waffle-iron-like donut makers. I bought the one you see in this photo at my Aldi grocery store for $15. It makes seven mini-donuts at a time. And it only takes about 2 minutes per batch.
It's not perfect, the donuts do not cook very evenly, but I like it because it was so cheap, and the donuts are small.
I can't find the exact same one online, but this one is similar.

The Sunbeam brand donut maker is the one you probably see most often in stores. You can also buy it online here. I like this one. (I borrowed this one from a friend.)
The donuts take about 4-6 minutes each, but they cook up more round than the mini one, and they're a little more evenly cooked than in my cheapie one.

I have been surprised that I love these Wilton donut pans. I really think they're about my favorite. The downside would be that you have to heat up the oven. But they cook faster than I expected, only about 5-7 minutes. And they turn out pretty round.
You can, of course, Buy it online here, but you can also find these at a lot of craft stores (JoAnn, Michaels). I have also seen them at Bed, Bath and Beyond.
I recommend buying two of them. That will make you a dozen at a time.

Now, the one pan I'm not wild about is this Wilton mini pan. I keep trying, but I just can't put little enough batter in it to make them look like donuts. Pretty much every time, I overfill them, and they turn out like mini bundt cakes. Not that anyone in this house has turned them down because of that!

So, coming up this week, you'll see recipes for many different donut combinations from Maple Bacon Peanut Butter Cup to Chili-Chocolate to my favorite healthy weekday donuts that the boys love, and that are actually good for them!

And this is all leading up to me and this guy going to visit Fox 9 this Saturday (June 15) to make "Donuts for Dads" in honor of Father's Day. If you want to watch us, we should be on around 8:45am Central Time. You can also live stream it from the Fox 9 Website.
