Apple Cider Doughnuts {Recipe}

The perfect fall breakfast... apple cider doughnuts. And these are actually not terribly unhealthy for you-- if you can look past the sugar coating.

What You Need:
(Yield: about 1 1/2 dozen large donuts, 3-4 dozen small donuts)
2 large eggs (beaten)
2 Tablespoons melted butter
1 cup all-purpose flour
1/2 cup whole wheat flour
1/4 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup plain yogurt (Greek yogurt best)
3/4 cup apple cider
1/2-1 tsp. ground cinnamon (to taste)

For the cinnamon-sugar coating:
1/2 cup white sugar
1/4 cup brown sugar
1/2 tsp. ground cinnamon
* paper lunch sack & gallon plastic bag



In a medium mixing bowl, whisk two eggs until light and bubbly. Add the remaining ingredients, and mix well.

Scoop or pour the batter into a zip-top baggie and cut a small hole in one corner. Fill a doughnut pan or doughnut maker about halfway.

My standard-sized doughnut pan bakes for 7-9 minutes at 425-degrees (F). My small doughnut maker bakes for 2-4 minutes.

Remove from the pan, and set on a cooling grid... DO NOT ALLOW the doughnuts to cool before shaking with cinnamon-sugar.

Combine sugar, brown sugar and cinnamon in a paper bag. (I had to put the lunch sack into a gallon plastic baggie because the sugar wanted to leak out of the bottom and make a huge mess!)

Shake one or two warm doughnuts at a time until completely coated
