SIMPLE PINEAPPLE COCONUT DUMP CAKE


Stir together the dry cake mix and shredded coconut. Sprinkle evenly over the pineapplerings. Melt the butter and drizzle over the cake mix, being careful to cover as much of thecake mix with butter as possible. Bake for 40 minutes or until golden and cooked through.

This might be the easiest cake you have ever made and I have my mother in law to thank for the recipe. It’s called a Dump Cake {not the best name in the world is it} because you simple dump the ingredients into your pan and then chuck it into the oven. It doesn’t get any simpler than that. This dump cake combines pineapple, coconut and nuts giving it great flavor and texture.

Pineapple Coconut Dump Cake
What you’ll need:
20 ounces crushed pineapple in juice
1 cup chopped pecans
1 cup sweet flaked coconut
1 stick unsalted butter – melted
1 box of yellow cake mix

What to do: 
1. Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray.

2. Into bottom of pan dump pineapple juice. Evenly sprinkle pecans and coconut on top. Evenly distribute cake mix on top. Drizzle melted butter on top.

3. Bake for 35-45 minutes until cake passes toothpick test. Allow to cool prior to slicing.
